  1. honestly, brining is bullshit. tried it a hundred times, doesnt make a difference. salt and pepper the chicken and throw it in the buttermilk overnight. tastes the same.

  2. I now make anything from chicken schnitzels to turkey burgers this way. It's just so good! I have recently started substituting turkey for chicken, a little more fatty but much gameier, cheaper and since it has way less hormones and steroids in it it's also much less damaging for you

  3. Don´t overdo the brining – due to time commitments I left the chicken pieces in the brine for 24 hours and after a further overnight marinade in homemade (that is to say living) kefir I did the flouring, frying and baking. They looked lovely but were inedible: much much too salty.

  4. Oh God, mines sitting in the buttermilk now after using the 100g salt in the video and in the Comfort Food book. Really worried all that effort will be wasted and it'll be disgusting.

  5. Really? I was Cook this at first time with this recipe and chicken was rare and salty as hell. How it possible that someone give really bad recipe like that? This procent of salt in water can be good for maximum 3 hours (12 hours??? Its insane, Really) . Otherwise you will need to keep this chicken 2 days in buttermilk to get out this salt a little bit. Also 20 minutes its most of the time not enough to Cook chicken. This 10 minutes more can't make this bad.

  6. Love this guy! But when will you correct the salt issue? Very disappointing after so much work to realize I put 3x the amount of salt. Damn. Please correct it in the video, others like me might be in a hurry getting kids ready and blindly trust the video.

  7. I have to take back my comment from 2 days ago! I added the 100g salt in the brine as in the video, and not too salty at all! Maybe the difference was I washed it before buttermilking and forgot to cut the meat. Maybe that helped, but was awesome anyway!!

  8. I just tried the recipe,me and my mum were exited but the crispy outer layer didn't stick to the chicken an now we've wasted loads of ingredients because of it,I'm now quite upset. I'm not sure what we did wrong

  9. Made this yesterday was good but I would say go half with the salt n sugar as it came out rather salty, my family still enjoyed it and was still juice the next day! Worth the effort just mind the salt 🤗 thx Jamie

  10. This man and food are Gods gift to us. Been watching him since his naked chef days in that little apartment. Weekly episodes was my thing!!! One trick he taught that I have never forgotten and still use and people are amazed is the knocking a jar lid on a wall to open it. People think I'm amazing. Fan since 14yrs old, now 36

  11. Hi, is it 100 gram of salt or 25 gram of salt as text on web site show?
    BRINE

    1 tablespoon black peppercorns

    25 g sea salt

    100 g brown sugar

    4 sprigs of fresh thyme

    4 fresh bay leaves

    4 cloves of garlic

Thanks Jamie allot of BS out there about this sort of copy cat recipes i believe somewhere between the crumbing or before baking some sort of citrus juice is added to give it that KayFC old school feeling. But you did the citrus juice at the completion which is interesting. Thx for the tips much apre.
