But im now about 15 videos in and im realizing there really was no recipe, I can leave everything out other than the stock cube. Basically, I am gunna wake up tomorrow, go out and buy some stock cubes and just eat those for dinner!

I defend him because the beef stock enhances the flavour considerably. I am against the use of a beef stock because it's far too high in sodium. You can achieve the same result as you would through a beef stock through a complicated blend of spices that you would have to prepare on your own. Eating this dish once a month is absolutely fine, but once a week would likely make you miserable after a while.
"You see Paul, grilling is like making love to a beautiful woman. Make sure your meat is well prepared and firm, ensuring that you give it a good rub beforehand with some oil. Once the pan has reached the right temperature, get your steak into it as quickly as possible and turn over midway so both sides get done. Finally, let it rest for a while to tenderise while you make a satisfying gravy from the remaining juices."
God damn GENIUS!! I was always skeptical of resting my steak after cooking. I really did not like cold meat. Used to annoy me as hell. Now, finally I have my answer: turn the heat down and met it rest in the pan. The man deserves a medal for this

That tip about turning the pan off and letting them cook+rest simultaneously is so simple but genius, can't believe I never thought of this. Trying this with my next ribeye.
I’ve tried this recipe with a beef stock cube, porcini powder…. Although it had a good base for flavour, it still needed salt and pepper, however just a little, not an excessive amount. I suggest anyone try a paste with a cube, it’s a game changer – really brings out the flavour in the beef as Marco said.

Dried porchini mushrooms (powdered) are a secret ingredient in a mushroom risotto, you'll never do it withought ever again 😉
Beef needs the beef stock to taste like beef, and turning the heat off allows the beef to be nice and hot, while preventing it from cooking as it sits
